wild foods are far from bland and tasteless behind me on this hillside is everything that we need to make a delicious spring roll we're going to use only ingredients that we find here on the hillside I'm not going to take it home and cook it up this is something that you can be on a survival outing and make and yet it's something that could be served in a fine restaurant first let's gather everything that we're going to need if you're already familiar with wild foods then you may already recognize a lot of the delicacies that are right behind me here if not I'm going to show you on the video what we're using but make sure that you get a really good weld food identification guide and get to know these plants before you use them in your spring wrong I would unhesitatingly recommend Samuel Thayer's foods wild foods books they are best ones I've found for learning learning a wild edible plants especially if if you're in the Great Lakes region this is to thwart has a distinct horseradish flavor we're going to use some of the greens this is trout Lily notice the modeled marking on the lead here are young basswood greens this is spring beauty there's a flower these greens are more delicious and have a better texture than anything that you can buy or anything that's cultivated we're going to be gathering a few of the larger leaves off these plants if you want to be kind to the plants you can just gather one leaf / plan these violet leaves are going to add a great delicate flavor and a little bit of bulk this is Virginia water Lee with those distinctive markings especially on the young plants I'm looking for the younger meet with a good stock I'm picking it low because that stock is really crunchy and delicious here are all my ingredients from left to right the basswood violet Virginia water Lee to thwart trout Lily spring beauty it's all resting on the leak leaf to make my spring roll I'm gonna gather up those greens you

fold their edges over and wrap it Malik Lee stock through the middle now I have a delicious spring roll ready to eat if the leak leaf is too strong for you you can wrap it up in a trout lily leaf instead you can also add any other edibles that are around dandelion will give a little bit of a bitter edge which is really delicious and another favorite is sheepshead sorrel it gives a great little sour flavor to it that's just starting to come up right now another trick if you do want to cook it a little bit the lesson that leak flavor is to stick it over the fire rotate it a little bit and cook up that leaf leak leaf a little bit that will sweeten it and make it a little less pungent because it is pretty strong really good lots of flavors packed with nutrition actually fills your belly takes only a few moments to make one of these so you can have a layout of 10 in no time at all enjoy I should I added this one would nettle and its young like this believe it or not I won't sting you and you can actually just eat it as is no sting really good you
