greetings my friends there are zombies in the woods and are they ever delicious come with me today as we learn about an amazing gourmet mushroom called the lobster mushroom the woods are filled with mystery and beauty and the lobster mushroom incorporates both this mushroom really is essentially a zombie we have certain species of mushrooms around us it's usually the peppery milk cap elect area species and what happens is that another fungus comes in it's a parasite of that lactarius and it changes it changes its very structure from this nice white regular looking mushroom to this strange misshapen orange mass so we're looking for this orange and you uncover it Maribel [Applause]

the top is still dirty but underneath you can see there's no gills left there's a little marks where they were those gills have completely dissolved something's under there oh my gosh we lucked out on this day what did you find oh my gosh how did you that's awesome Wow a few things to know the lobster mushroom when it's young is very firm and dense that's when it is prime as it gets older it's going to darken it's almost sort of a red color usually but it's also going to start to get soft kind of mealy inside so you can look at the color or you can reach down and feel it is it solid good

now sometimes they're gonna feel don't know if you can hear that kind of Hollow and then they're really not worth harvesting sometimes they'll be some solid down at the bottom but usually by this point you can see it's just and I've eaten away in kneeling and it doesn't have that nice texture here's the other side this mushroom is actually delicious we usually just cook it up in butter but there's various ways to cook it for people that don't like mushroom this one is usually a winner because it's crisp and firm even when you cook it cleaning it can be a little bit tricky here's what we do just take the flat of a knife and we're gonna just kind of scrape along you don't have to scrape really really hard and what you're gonna see is that you can get all the stuff off of the one side usually one side is gonna be quite dirty the other side is going to be very clean and bright orange I consider this to be a very safe mushroom because there's really nothing else that looks like it so go out look for it it is a really good mushroom see if there's any zombies in your forest we'll talk with you soon [Music]
