so I'm going to cook a steak right on the coals stay tuned okay so looking at a bone-in ribeye steak I like mine shrimp a little bit on that side all right here's the delicious fat cap that is the best piece of meat found in my opinion man is that good sometimes is a little piece of fat that's a shape of a square right underneath the fat cap and it's just to die for

all right so let's start cooking okay my rub is going to be real easy this is maple sugar that I made myself boiling down maple syrup I also have Atlanta cloche in salt that I made myself by blowing down some ocean water what I'm doing here is scraping the coals off these logs I'm using poke want to use hardwood coals for this okay so that's created a nice pile of coals that I can cook my steak on I'm going to pull those out of the fire just a little there's my coal bed I'm going to put my steak right there just scrape the clothes off you

okay click the other side cooking nicely so it's been about three minutes on this side definitely hot again just going to peel off any embers any coals I have stuck so check this side hasn't cooked as much as the other side so now I'm going to put my Amber's back in for a moment draw some of these nice hot orange embers so I can increase the heat now these are orange so I'm going to give them a minute to cool down is they a little too hot and start cooking again put my stake right back on there nice sizzle sorry just trying to smell good oh yeah look at that

oh man now cook that side all right looking delicious I notice that the fat cap is starting to pull off seeing as it's in front facing the fire it's cooking a little faster so I think I'm going to cut that off as it's in about medium-rare right now give a taste while the eye of the rib continues cooking let's pull that off all right look at this beautiful steak let's tear into it looks like it's medium to medium-rare just cut this fat cap off first well looks good let's taste that first here we go hmm oh yeah oh you can't beat up mmm that is ridiculous

mmm little bit of smoky flavor nice hardwood coals case of the fire fat cap is stunning mmm delicious rub this is incredible maple sugar mmm sea salt rub this is unreal so tender Matt's good that's cooked so well that is insane it's ridiculous mmm get some off oh yeah

medium-rare look at that its moist and juicy

the fat is still intact steaming oh man mm-hmm yeah so good yeah just look at that it's juicy oh man couldn't have cooked better so there it is right there they're just weeping flavor mmm mmm ma'am well this been missionary survival I'm gonna enjoy my dinner see in the next one take care
