Survival Food - Chicory (Cichorium intybus)

Description

In this video I show how to prepare a coffee substitute from chicory roots (Cichorium intybus). It is one of my favorite survival food since it its roots are rich in inulin which is a carbohydrate that gets digested in the guts of the human body. So it takes some time until you can access the energy after eating the plant. Furthermore inulin is very soluble in hot water. Chicory roots are also very bitter, so it is wise to leech them out with cold water for a couple of hours. You can boil the roots as well which is much faster, but then the inulin would dissolve as well. Today I did not really care about the inulin, I just wanted to make myself a quick coffee in the wilderness.

hi guys my name is Lily and today I want to show you another wild edible this here is chicory and all parts of the plant are edible you can eat the flowers believes the stem and most importantly the roots the roots contain a carbohydrate which is called inulin and inulin gets the chest in the guts of the human body so it takes some hours until you can access the energy that you need ok now let's take a look at the plant it's pretty easy to identify it has this very nice flowers they have a very unique shape and stem is easy to identify too and at ground level you will find a rosette which has leaves that remind of dandelion today I want to make myself a roasted chicory coffee so I'm digging up some of these rules here that's how the roots look like pretty similar to dandelion these are all the roots that I could gather and now it's time to clean them up

now the problem if trickery is that it's extremely bit on so I mean you can eat it like that if you want to and bitterness always helps if you have an upset stomach but if you want to eat it in large amounts you have to get rid of the bitterness and one way to do it is to boil the root but that would also dissolve the inulin the carbohydrate which is in the roots and unfortunately in your lien dissolves in hot water so if you want to eat chicory as survival food you can put it into cold water which will leach out the bitterness over a couple of hours but the annealing stays inside of the root today I don't really care about the inulin and I just give the chicory roots a good boil to get rid of the bitterness and then I'm going to make a good coffee out of it it tastes very good it reminds me of the N de Lyon booth coffee and this is considered to be a coffee substitute although it's non-caffeinated and it actually doesn't taste like coffee but it's a very becoming beverage I want to thank you for watching if you are interested in other wild edibles check out my survival food playlist which you find in the info box or down in the description thanks and stay tuned till next time
